Dairy-Free Avocado Chocolate Ice Cream
I made this dairy-free avocado chocolate ice cream recipe for the first day of summer because there’s no better way to celebrate the longest day of the year than with ice cream, right? Healthy, avocado ice cream, that is 😉 If I had you at avocado, then go on…tell me, how many scoops do you want?
Calling all ice cream lovers…
Ice cream is one of my favorite things. Especially when traveling, I have to always stop at a local ice cream shop to try new flavors and, well, indulge a little. Is it superficial of me to judge a new city based on their ice cream options? Tell me I’m not the only one who does this!
No yucky ingredients!
What I love about this ice cream is that it isn’t loaded with gums, thickeners, it doesn’t even contain dairy. If you’re wondering how can any ice cream be good without dairy, then you are in for a real treat. Guys, meet chocolate avocado “nice” cream. This ice cream is:
- rich
- smooth
- dairy free
- packed with healthy fats
- indulgent
- sweet
- chocolatey
Plus, no need to have one of those fancy ice cream makers because you can make this with just a high-speed blender or food processor.
Avocado + Chocolate + Coconut Milk
Did you say healthy fats?
Oh yeah, I went there. Believe me when I tell you, don’t be scared of fats! Even a study done at Harvard states that fats are essential for the absorption of some vitamins and minerals. Fats are also essential for building cell membranes, muscle movement, and reducing inflammation. As long as they are the right “type” of fats. Avocados are a great source of monounsaturated fat, a “healthy” type of fat that can lower bad cholesterol and even improve your mood. Mix that into ice cream, and we just took the term “good mood food” to a whole new level.
It’s super easy too!
To make this delicious ice cream, simple heat a can of full-fat coconut milk over the stove with coconut sugar until the sugar is dissolved completely. Then stir in cocoa powder until melted and well incorporated. Lastly, add the cocoa mixture to a food processor with the rest of the ingredients and blend it up.
You can enjoy this as a pudding or turn it into decadently creamy ice cream.
You can use the instructions to make it in your ice cream maker, or pour it into a loaf pan, cover it, and put it into the freezer for 4-6 hours. Before indulging, let it sit out on the counter for 20ish minutes to soften it up!
