Quinoa Chopped Salad
This chopped salad is so easy to make, and it works incredibly well if you have leftover chicken or quinoa. You can even serve this salad warm by heating up the chicken, quinoa, and corn before mixing it all together. Seriously, it’s so versatile and it can be on the table in less than 5 minutes once you have your ingredients!
I also love this recipe is because of how many flavors you get in every bite! There’s the fresh greens, roasted corn, quinoa, juicy tomato, and creamy hummus! Plus, since it’s a chopped salad, every bite is perfectly mixed in with the dressing for an even distribution of yumminess throughout the entire dish.

You can throw anything into a chopped salad. Simply…
1. Pick a Base
Use any of the greens: arugula, cabbage, chard, dandelion, green leaf lettuce, kale, red leaf lettuce, romaine, spinach… and the list goes on and on!
2. Pick a Protein
I love choosing from chicken, chopped up burger patties, edamame, eggs, and tuna – but you can use absolutely anything!
3. Pile on the Extras
I recommend loading up your salad with a bunch of extras. For healthy fats I love to throw in some avocado plus sunflower or pumpkin seeds. I also add extra vegetables like chopped broccoli, grilled asparagus, and roasted brussels sprouts. You can even add in spices, fruit, and rice! Check out this post for tips to build a better salad.
4. Dress It Up
Finally, pick a dressing. This can be as simple as olive oil and balsamic, or you can make your own dressing! I enjoy making a honey mustard once in a while (just combine olive oil, dijon mustard, a splash of vinegar, and a touch of honey), and I also love making creamy dressings by using some avocado mayo, olive oil, and a touch of vinegar. Just make sure you don’t get tricked into using one of those “healthy” store bought dressings that are filled with unhealthy oils!

- 1 cooked chicken breast, diced (grilled or Easy Crispy Oven Roasted Chicken tastes amazing!)
- 2 cups baby arugula, chopped
- 2 cups baby mixed greens, chopped
- 1/2 cup cooked corn kernels
- 1/2 cup cooked quinoa
- 1/2 tomato, diced
- 1/4 tsp. black pepper
- 1/4 tsp. sea salt
- 2 tbsp. hummus (try my homemade hummus!) mixed with 1 tsp. apple cider vinegar
- Add all of the ingredients to a large mixing bowl, toss everything together really well, then dig in!
Make the salad a "warm salad" by using warm quinoa, warm chicken, and warm corn kernels in the salad.
